Roasted Curried Califlower Puree


1 head cauliflower, diced into 1/2″ peices
3 Tbsp bacon fat
3 Tbsp olive oil
1 Tsp ground ginger
3 Tbsp curry powder
1 tsp salt
1/2 cup whole milk

Melt bacon fat in dutch oven with olive oil. Fry ginger and curry powder briefly until fragrant. Add cauliflower and toss in fat. Cover and place in preheated 350 oven. Roast covered for 20 minutes until fork tender. Remove cover and roast for an additional 15 minutes until almost dry. Place into bowl with milk and puree with hand blender. Serve immediately.
